The cats are now hiding under the table in the basement. I vacuumed up the debris in the computer room doorway, which meant they had to flee the evil vacuum cleaner.

Tomorrow I'll pull all of the nails from the old trim, measure where the cutouts for the hinges and strike go, and then chop all the debris small enough to fit in the trash can. Then I'll start sanding and prepping the new wood. I think I want to stain it before I cut it so that the required handling can't leave spots on the wood that won't stain.

Herbed Popovers

3 eggs
1 egg white
1-1/3c milk
1-1/3c flour
2t sugar
1/2t salt
1T finely chopped fresh chives
1T finely chopped fresh parsley

Preheat a popover pan in an oven set to 350°F.

Simmer the milk, allow to cool slightly.

Sift together flour, sugar, and salt, set aside.

Whisk together the eggs and egg white, slowly add the warm milk. Whisk in the flour mixture and herbs.

Liberally brush the popover pan with butter and pour in the batter. Increase the oven temperature to 450°F and immediately bake the popovers for 20 minutes. Reduce the heat to 350°F and continue to bake until the popovers are deep brown and pull away from the pan sides, about 20 more minutes.

Pierce popovers with a knife to allow the steam to escape. Serve immediately. Makes 8 popovers.
